Gippsland grass fed.  Best cooked with the reverse sear method.  Cook with indirect heat for 20 to 30 minutes (desired internal temp 50°c) then sear on hot plate or grill for 3 to 4 minutes each side, then roll across the back fat for 2 minutes.  Rest for 10 minutes, slice and enjoy!
